Every Christmas, Gramma made chocolate fudge for us. Not just any fudge. The creamiest, melt in your mouth, not too sweet, most heavenly chocolate fudge on this earth. We tried not to eat it all at once but we kept sneaking back to the fudge tin hoping someone hadn't eaten the last piece. We asked Gramma how to make it but no matter what we did, our fudge came out grainy, or lumpy, or too mushy. Finally we decided we had to watch Gramma make the fudge. Easier said than done. First we had to be in the kitchen ready to go by 6 AM. Then we had to watch and write everything down which was kind of tricky because Gramma didn't actually measure anything. She just knew how much to add, how to boil the sugar mixture long enough, but not too long, how much to stir, how hot but not too hot . When we got home, we tried again to make the fudge...and again....and again. After awhile we learned how much vanilla to add, how long to boil the sugar, and how to stir in the marshmallow creme until our arms were sore. Every Christmas we make Gramma's fudge. Not just any fudge. The creamiest, smoothest, not too sweet, most heavenly fudge filled with sweet memories of Gramma.
